It’s that time of year… The time when we are feeling the effects of all the holiday goodies consumed over the past 6 weeks. As much as I enjoy indulging, I also get burnt out on the sweets and junk food. Especially now that I’m a mom. I look forward to getting back to our normal routine, which includes much healthier eating habits.
My husband and I are invited to attend a fall party this Friday, and I have to admit that I am a bit jealous that I won’t get to partake in the adult beverages. I’ve never really missed drinking while pregnant before and it’s really not the alcohol I care about, but the sips at fall parties tend to be particularly yummy. So I scoured the internet (actually, let’s be real, I scoured Pinterest) for non-alcoholic drinks that would allow me to enjoy the flavors of fall too. These 20 mocktails feature fall flavors like apple, pear, cranberry, pomegranate, ginger, and cinnamon (and a few others).
I don’t know about you, but as much as I enjoy cooking, I prefer quick and easy dinners in the summer. I mean, seriously, I would much rather take advantage of these warm weather days doing things I can’t do in winter. Ya know?
We spend quite a bit of time outside in the warm months, often doing yard work or tending the garden and the kids play hard. It gets hot and humid here, so light dinners are a nice way to wind down the day.
This is one of my favorite simple summer dishes to make. Even though it is a pasta dish, it is actually pretty light, especially paired with a simple salad. It isn’t a hot dish, but not cold like a pasta salad either. Sorta in between. It is great as the main course or as a side dish and it always disappears quickly at potlucks!

It’s quite simple. I love to use peach mango juice, which I buy at Costco. You can also use any other kind of juice you want, so get creative!
