Well friends, I’m 37 weeks pregnant as I write this post, and next Sunday (Easter) I’ll be 38 weeks. I’m officially within 2 weeks of Baby Number 3 making his or her world debut. My doc is not letting me go past 39 weeks, so I’ve got a c-section scheduled in case I don’t go into labor before then.
This week will probably be fairly normal, although we are still finishing up some last minute tasks to get ready for baby. But I really hope baby will arrive on his/her own terms sometime next week, which means meal planning is out the window! So this will probably be my last Meal Plan Monday post for a while.
Once baby arrives, we’ll be really taking things easy for a few weeks, which will mean very simple meals (like sandwiches with veggies & ranch, big salads, and meals from our freezer). I’ll be focused on baby and healing, and not so much on schedules and routines. I may write a post or two about meal planning, but not sharing meal plans specifically. Rest assured, though, I will start them back up once we get into the swing of being a party of five! They are, after all, one of my biggest musts for maintaining balance and sanity as a busy mom!

Here’s our meal plan for the week:
Monday (today): Baked Penne, Italian Salad, Garlic Bread*
Tuesday: Spicy Sausage Skillet
Wednesday: Spinach and Feta Quiche, Fresh Fruit*
Thursday: Chicken Pot Pie
Friday: YOYO (You’re On Your Own!)
Saturday: Meatloaf, Garlic Mashed Potatoes, Steamed Broccoli and Cauliflower, Bread
Sunday: Roasted Chicken, Herb Cheddar Garlic Bread, Tossed Salad
*Meatless Meal – Each week, I try to plan for at least one meatless dinner. Like Meatless Monday, but we don’t restrict it to just Mondays. We also almost always go meatless for weekday breakfasts too.
