This week is full of daytime appointments, which means I’ll be doing more work in the evenings. So it’s another week of simple, easy dinners. Until Saturday, that is, because my husband has spring fever and is itching to cook his amazing pork tenderloin on the grill. Hopefully the weather cooperates! You never know this time of year, although I know him well enough to tell you he will not let a spring shower stop him.

Here’s our meal plan for the week:
Monday (today): Chicken and asparagus stir fry, brown rice
Tuesday: Simple Avocado Basil Pasta
Wednesday: Taco Salad
Thursday: French Toast, Cheesy Spinach Eggs, Fresh Fruit*
Friday: YOYO (You’re On Your Own!)
Saturday: Pork Tenderloin, Grilled Veggies, Parmesan Rice
Sunday: Family Dinner with my mom and my sister and her family.
*Meatless Meal – Each week, I try to plan for at least one meatless dinner. Like Meatless Monday, but we don’t restrict it to just Mondays. We also almost always go meatless for weekday breakfasts too.
