This is actually a rather busy week. I’ve got a couple of evening engagements – one meeting and one volunteer commitment. I’ve also got a few appointments during the day, making my work schedule a bit cramped, which means I’ll need to work a bit in the afternoons/evenings to make up for it. And at 35 weeks pregnant, my energy is waning! So dinners are very much on the easy side this week.
I’m sharing my weekly meal plans as a way to help encourage YOU to meal plan too! I hope you’ll get some ideas and inspiration. Here’s our meal plan for the week:
Monday (today): Pork Burgers, Crockpot Mac and Cheese, and Asparagus
Tuesday: Tater Tot Casserole
Wednesday: YOYO (You’re On Your Own!)
Thursday: Pancakes and Green Smoothies*
Saturday: Chicken Legs, Garlic Noodles, Tossed Salad
Sunday: Tortellini with Sun-dried Tomato Alfredo Sauce, Caesar Salad, Garlic Knots*
*Meatless Meal – Each week, I try to plan for at least one meatless dinner. Like Meatless Monday, but we don’t restrict it to just Mondays. We also almost always go meatless for weekday breakfasts too.
