I’ve got a board meeting Monday evening, so I’m making something that will be easy for hubby to clean up quickly before he has to get the kids in the bath while I’m gone. Also, you’ll see I’m still working on stocking the freezer with meals for after baby arrives! Do you have favorite freezer meals? If so, please share! I love to getting inspiration from my readers. I like meals that I can just go ahead and prep while I’m already making dinner rather. Stocking your freezer is so much easier that way.
Here’s our meal plan for the week:
Monday (today): Veggie Parmesan Risotto*
Tuesday: Crockpot Teriyaki Chicken and Veggies (doubling and freezing half)
Wednesday: Tex Mex Sloppy Joe’s, Potato Wedges, Carrot Sticks and Ranch (doubling the sloppy Joe’s and freezing half)
Thursday: Baked Mostaccioli and Caesar Salad* (doubling and freezing half)
Friday: YOYO (You’re On Your Own!)
Saturday: Meatloaf, Crockpot Mac and Cheese, Steamed Green Beans, Tossed Salad, Crusty Bread
Sunday: Italian Wedding Soup
*Meatless Meal – Each week, I try to plan for at least one meatless dinner. Like Meatless Monday, but we don’t restrict it to just Mondays. We also almost always go meatless for weekday breakfasts too.
