What’s going on this week:
This is my first week of spring classes, so I’ll be spending a great deal of time making sure all of my students have what they need for a successful semester. A couple of the classes I’m teaching are brand new, so there will certainly be bugs to work out! My youngest has an appointment with her allergist one morning this week, but our evening schedule is rather tame. Even still, as a working mom, I need quick and easy dinners for weeknights!
Here’s our meal plan for the week:
Monday (today): Smoked Sausage with Spinach, Orzo, and White Beans; Tossed Salad
Tuesday: Cheese Stuffed Shells and Garlic Toast*
Wednesday: Chili and Cornbread
Thursday: Spaghetti Squash Chow Mein and Egg Rolls*
Saturday: Ham, Green Beans, and Potatoes
Sunday: Crockpot Pesto Ranch Chicken, Brown Rice, Green Salad
*Meatless Meal – Each week, I try to plan for at least one meatless dinner. Like Meatless Monday, but we don’t restrict it to just Mondays. We also almost always go meatless for weekday breakfasts too.
